Functional foods derived from main crops, such as wheat and corn, are of interest within a balanced and varied diet. This study addresses the overall molecular properties of the phenolics and anthocyanins present in the outermost fractions of the pigmented varieties of common grains. These fractions were collected by de-branning or from the bran obtained from milling the same grains, and can be used as such for preparing nutritionally enriched foods, with negligible or minimal detrimental effects on the microstructure and appearance of the final food.
