A new singular alteration of dry seasoned salami is here described. The responsible bacteria has been identified as Serratia odorifera biogroup 1. The microorganism quickly multiplies on the surfaces of dry seasoned salami, it produces a pungent smell and liquefies the collagene which constitutes the bowels.
