Cultured meat and food safety: research priorities and future challenges

Cultured meat could represent a viable and sustainable alternative to proteins of animal origin, opening new markets not replacing traditional ones. Given the rapid and growing interest, and the possible future introduction of cultured meat in the European Union food market, research is needed to evaluate strengths and critical points of cultured meat, with a focus on food safety along the entire production chain.
