The aim of this work was to perform some wild ruminant specie's identification - deer, chamois, and roe - by IEF (Isoelectricfocusing). Then it has been found the non volatile fatty acids composition of deer, chamois and roe fat by gaschromatography. There are some differences in the considered species, specially between those coming from different Families (chamois vs deer and roe).
