This chapter will address the latest developments in sensory and consumer research with children. New approaches to existing methods (e.g., observational studies), adaptation of methods from other research areas (e.g., sorting and projective techniques, implicit memory paradigms), as well as new methodologies that have been adapted to children (e.g., check-all-that-apply method) will be presented, providing a brief overview of the relevant theoretical background and then focusing on their application, critically discussing the usefulness and drawbacks of each approach. Attention will be also devoted to the analysis of the factors that play major roles in determining the appropriateness of approaches to consumer studies with children according to their age.
