Nutrientrichness,andspecificallytheabundanceofmono-anddisaccharidesthatcharacterizeseveralfoodmatrixes,suchasmilkandgrapejuice,hasallowedthespeciationoflacticacidbacteriaandyeastswithahighfermentationcapacityinsteadofenergeticallyfavorablerespiratorymetabolism.Intheseenvironmentalcontexts,rapidsugarconsumptionandlacticacidorethanolproduction,accumulation,andtolerance,togetherwiththeabilitytopropagateintheabsenceofoxygen,areseveralofthe“winning”traitsthathaveapparentlyevolvedandbecomespecializedtoperfectioninthesefermentingmicroorganisms.Here,wesummarizeanddiscusstheevolutionarycontextthathasdrivenenergeticmetabolisminfood-associatedmicroorganisms,usingthedairyspeciesLactococcuslactisandStreptococcusthermophilusamongprokaryotesandthebakers’yeastSaccharomycescerevisiaeamongeukaryotesasmodelorganisms.
