The work reports results of experiences about the use of stevioside in unusual sweetener blends. In particular, results are reported concerning the production of a sweetener blend containing only stevioside and maltol. The criterion here adopted is the substitution of the traditional bulk agents with flavourings. The example here reported concerns the use of maltol for covering the typical stevioside liquorice after taste and improving blend taste properties. The work also reports results relating to an innovative HPLC/ELSD (Evaporative Light Scattering Detector) analytical method developed for the characterisation and determination of stevioside. This work has to be inserted in a more complex study regarding the production, extraction and use of the diterpene glycoside stevioside and carried on by DIFCA - University of Milan.
