Most of the valuable nutritional characteristics of blueberry (Vaccinium. corymbosum L.) fruit are related to polyphenols and more specifically to anthocyanins, pigments responsible of the blue-violet color of the berries. In order to understand the relationship between anthocyanins content and environmental conditions, fully ripened berries of the four cultivars (cv) ‘Duke’, ‘O’Neal’, ‘Berkeley’ and ‘Chandler’ have been sampled at two different timing. The absolute content and the relative composition of individual anthocyanins have been analyzed together with the quantification of the environmental resources and limitation in the ten-day period before sampling. First results are here presented.
