The aim of our study was to investigate the degree of membrane permeabilization by applying Pulsed Electric Field (PEF) treatment to plant food matrices (potato, apple, carrot) using magnetic resonance imaging techniques. The effect of electroporation treatment on T2 relaxation times was evaluated by comparing the electric field distribution obtained by magnetic resonance electrical impedance tomography with the induced changes of T2 values. The results provided useful insights into the evaluation of electroporation and suggest that magnetic resonance electrical impedance tomography could be used as an efficient tool to improve the efficacy of electroporation treatments.
