The aim of our study was to investigate the degree of membrane permeabilisation by applying electroporation treatment to plant and animal food matrices (potato, apple, chicken) using magnetic resonance electrical impedance tomography and T2 mapping. The effect of electroporation treatment on T2 relaxation times was evaluated by comparing the electric field distribution obtained by magnetic resonance electrical impedance tomography with the treatment induced decrease of T2 values. The research results provided useful insights into the evaluation of electroporation and suggest that magnetic resonance electrical impedance tomography could be used as an efficient tool to improve the efficacy of electroporation treatments.
