Non-destructive and real time monitoring techniques are crucial for food quality assessment, facing the industry 4.0 approach. This PhD project aims to develop customized optical devices for viticulture. Optical-simplified IoT devices for real-time grape maturation monitoring were designed, built, and tested. Optical signals from LEDs at 4 selected informative vis/NIR wavelengths were used to predict grapes ripeness parameters. Lab-scale and field experimental campaigns were performed to verify reliability and limits of this new generation of stand-alone optical sensors.
