The alkali test has been extensively employed for years in rice studies as an indirect estimation of the gelatinization temperature and rice cooking quality, even if the interpretation of the results is largely subjective. The aim of this study was the improvement of the alkali test by means of Image Analysis, a technique that assures good accuracy and consistency while eliminating the subjectivity of visual inspection. A significant correlation (r=0.942) was found between the alkali test spreading scores and the rice kernel disintegration area (named RDA%) obtained from Image Analysis.
