The overall quality of semi-preserved anchovy fillets in oil is strongly dependent on the quality of the catch as well as on the manufacturing processes adopted by the fishing industry. The enzymatic processes underlying the fish ripening tend to remain also during the storage, especially if holding temperatures and packaging materials are inappropriate, thus being potentially responsible for the rapid loss of the sensorial properties of the fish product. In the present work the modification over time of different qualitative parameters of samples of anchovy fillets in oil stored in different packaging materials (glass and plastic) and at different temperatures (18 and 28°C) was instrumentally evaluated. The exposure to high temperature determined a rapid and widespread deterioration of the anchovy fillets, while no significant packaging-dependent modification of the organoleptic quality of the fish were identified.
La qualità globale delle semi-conserve di alici sott’olio è strettamente dipendente dal pescato, nonché dal processo produttivo adottato dall’industria di trasformazione. I processi responsa- bili della maturazione sotto sale delle alici permangono durante la conservazione del prodotto e la loro evoluzione può essere influenzata da fattori esterni quali la temperatura di conser- vazione e la tipologia di confezionamento. In particolare, condizioni non adeguate possono determinare potenzialmente uno scadimento precoce delle proprietà sensoriali. Nel presente lavoro è stato valutato l’andamento nel tempo di alcuni parametri qualitativi, misurabili strumentalmente, di filetti di alici sott’olio conservati in due diverse tipologie di confezionamento (una in vetro ed una in materiale plastico) esposte a due diverse condizioni di temperatura, una considerata come temperatura ambiente (18°C) ed una di abuso termico (28°C). Le elevate temperature di stoccaggio hanno determinato un rapido e generalizzato deperimento dei filetti, mentre la tipologia di confezionamento sembra esercitare un effetto meno pronunciato sulle proprietà organolettiche delle alici
