Global health, as a collective issue, must be addressed by looking not only at humans but at the entire ecosystem. In this perspective, research aimed at pursuing public health protection requires a multidisciplinary approach. In this chapter, the assessment of environmental quality and in particular the assessment of the environmental footprint of livestock and food supply chains and the related environmental impacts are described and the technological innovations to implement a sustainable livestock and bioeconomy for a better protection of public health are exposed. In this sense, preventive health systems are also defined both in human and veterinary field and their integration with environmental and socio-economic data in a one-health perspective.

Abstract
