Il mestiere dell'oste tra immigrazione e radicamento: il caso dei "brugnoni" milanesi tra sette e ottocento

This paper examines the social profile of the professional category of innkeepers, particularly widespread and important because of the mediating role they played throughout the Modern Age. The result of this study points out how innkeepers were mainly foreigners in the cities and towns where they worked in; as a consequence they both catalysed the migratory fluxes and offered support for the emigrants from their birthplaces. In particular, we focus on the fortune and troubles of immigrants from Ticino (Southern Switzerland) in Milan, where they began working in inns and later giving birth to modern hotels. Their contribution is shown in this paper to have been seminal to the development of a modern system of hospitality in the first half of the Nineteenth century

L’articolo intende indagare la fisionomia sociale di una categoria di operatori particolarmente numerosa ed importante per il ruolo di intermediario che svolse nel corso di tutta l’età moderna, quella degli osti. Quello che emerge dall’indagine è la condizione di “forestiero” di coloro che, nelle varie città, si trovarono a esercitare questo mestiere. Proprio per questa loro condizioni svolsero a lungo un ruolo importante all’interno delle catene migratorie e nella diffusione della stessa professioni tra i conterranei. In particolare ci si sofferma sulla vicenda degli immigrati ticinesi diretti a Milano, dove avviarono una serie articolata di attività nel mondo della ristorazione prima e della ospitalità poi, contribuendo in maniera significativa alla trasformazione delle tradizionali osterie in moderni alberghi che iniziarono a diffondersi rapidamente nella Milano dei primi del XIX secolo.
