Epidemiological research indicates that diet and nutritional factors influence the development of cancer. However, apart from a few well-established causal associations, as those involving overweight/obesity, aflatoxin and alcohol, the exact role of most dietary factors in causing or protecting against human cancer is yet to be fully clarified and quantified. In the present short review, we give an overview of some of the most relevant nutritional and dietary factors that may affect cancer risk, including vegetables, fruit and their related components, the Mediterranean diet, cereals, meat, alcohol and coffee.
