By differential scanning calorimetry the thermal behaviour of RBC membrane phospholipid mixtures was studied. Samples were obtained from three groups of cows fed with different diets: a control diet and two others containing an high proportion of C16:0, C18:0, C18:1 n-9 and a low proportion of C18:2 n-6 and C18:3 n-3 fatty acids. The lipid composition of RBC membranes change as a consequence of the modified diet. Aim of this work was the analysis of the thermotropic properties of phospholipids extracted from RBC membranes as a function of the different molecular species and of the total phospholipid fraction fatty acid pattern.
