The results of the application of 2001 1471 /CE Decision in a pig slaughterhouse are reported. Bacteriological analyses with the destructive method are more careful above all to quantify the bacterial loads of the carcass. Furthermore, there have been two experimentations: the first has to highlight the relationship between environmental and carcass hygiene and the second to evaluate the positive effects of carcass washing on total bacterial loads. Therefore, the application of 2001/471/CE Decision after carcass washing and before the dissection, completes the application of self-control in all the phases of the work-line, leading to improvements in the hygienic conditions of both the environmental and the production itself.
