Organoleptic quality of peaches is strongly influenced by sugars and acids concentrations in the flesh. This work aims to investigate the composition in acids and sugars of peaches of two progenies obtained by controlled crosses. In both progenies comparing seedlings with the highest total soluble solid (TSS) to those with the lowest TSS,fruits from the former trees showed, as predicted, a greater amount of sugars. However, a great variability in terms of distribution of sugars and acids between the two groups of seedlings (highest and lowest) has been recorded. Malate revealed as the main carbossilic acid in fruits (over 60% of the acid pool), but relevant concentrations of quinic (over 27%) has been detected. Sucrose and sorbitol are, in both progenies. Since the former was relatively higher in seedling with the lowest TSS, this could be to their hihger efficency in converting the alcohol sugars to sucrose. More insight is required for the correct understanding of this aspect.
