This chapter offers an updated overview of rock-cut wineries in central and southern Italy and discusses the interdisciplinary approaches that are currently being applied within the Immensa Aequora project in Sicily, Ischia, and Calabria. We advocate for the broader study of these installations across Italy and the Mediterranean, with greater attention given to their associated contexts, which in the past have often been ignored or overlooked.
