Development of a series of sugar-based surfactants starting from sugars (i.e., glucose and galactose) recovered from cheese whey permeate (CWP). Processes intensification was made possible by exploiting enabling technologies as flow chemistry and heterogeneous reagents and catalysts, to increase the sustainability and the scalability of the whole process.
