This work describes a simple, rapid, and reliable HPLC method for the determination of organic acids in European plaice (Pleuronectes platessa). The natural concentrations of lactic, acetic and citric acids in whole European plaice were quantified by HPLC system with UV detection, the mean and the 95% confidence interval of each organic acids were calculated. The mean concentration of lactic acid, citric acid and acetic acid were respectively 2596,0 ppm, 1110,8 ppm and 640,5 ppm. The method was applied to fresh fillets of European plaice with and without the statement of citric acid added in label. Two samples, without statement of added additives in label, had a citric acid concentration over the right side of confidence interval of mean calculated. In conclusion, the proposed method is suitable for the control of the presence of organic acid added.
