Previous studies evidenced that the main composition differences among eggs from different housing systems are related to hen feeding characteristics. Aim of this research was to study the composition of organic- and cage- system feeds and its influence on proteins, lipids, fatty acids, carotenoids and tocols contents in shell eggs. To this end, the feed and shell eggs of 35-45 weeks old Hy-line Brown hens, reared in organic and cage systems, were analysed. Organic feed was characterised by higher PUFA (mainly linoleic and linolenic acids) as well as lower MUFA (oleic acid) and SFA (palmitic acid) percentages; lower lutein but higher zeaxanthin and -criptoxanthin contents; lower -tocopherol and -tocotrienol but higher -tocopherol contents. Feeding formulation strongly influenced egg composition; in spite of this, a different deposition efficiency of carotenoids and -tocopherol was observed in the eggs from the two housing systems.
