This contribution centres on the symbolic significance of food, which assumes values relating not only to the process of sustaining life but also as a meaning system. The analysis makes particular use of ideas that have emerged from the history of thought, especially in the context of aesthetics. It begins with the modern age that emerged from the mid-17th century, and more explicitly from the early 18th century, reflecting on the idea of “taste” as meaning a property that enables us to make judgements through the intellect and the body. This is followed by an analysis of the crucial contribution of Kant’s thought, then other important sources, eventually quoting more recent anthropological work like that of Lévi-Strauss.
Il contributo ruota intorno al significato simbolico del cibo, che assume valore non solo in rapporto al processo di sostentamento vitale ma come struttura di senso. L’analisi si avvale soprattutto dei contributi emersi nella storia del pensiero, in particolare nell’ambito dell’estetica. Si parte dall’epoca della modernità, come emerge da metà Seicento e più esplicitamente da inizio Settecento, che riflette sull’idea di “gusto”, inteso come proprietà che consente di giudicare sia attraverso l’intelletto sia attraverso il corpo. Si passa quindi ad analizzare il contributo centrale del pensiero di Kant, e quindi vari altri apporti, fino a citare recenti lavori di taglio antropologico, come quelli di Lévi-Strauss.
