In a shifting context, at a critical moment for both general and specialised lexicography, it becomes necessary to rethink terminology in terms of its functional use in standardisation, translation, and linguistic policy. This paper analyses the results of a research on translation that was included in a wider research, laying the foundation for the conceiving of the "Dictionary of Nutrition", a specialists' dictionary, in nine languages, addressing the principal issues that the 2015 Milan Expo will be focussing on (gastronomy, biotechnology in food science, nutrition and food safety). The goal was to create an instrument for coding and decoding that would take into account the cultural dimension of the different domains, the diversity in scientific and technological development of the cultures addressed, and the problems with diglossia posed by some of these languages..

En un contexto cambiante y, en cierto modo, crítico para la lexicografía general y especializada, es necesario repensar la terminología en función de su utilidad para la normalización, la traducción y la política lingüística. En este artículo se analizarán solo los resultados que afectan a la traducción de una investigación más amplia que ha constituido la base para la realización del “Diccionario de la alimentación”, un diccionario especializado en nueve lenguas sobre las materias de la Expo 2015 de Milán (gastronomía, biotecnologías para la alimentación, nutrición y seguridad de los alimentos). El objetivo ha sido crear un instrumento para la codificación y la descodificación que tenga en cuenta la dimensión cultural de los dominios, la diversidad del desarrollo científico y tecnológico de las culturas tratadas y los problemas de política lingüística y normalización que derivan de ello.
