The aim of this work, begun in 1998 but carried on in different periods, was to study the adaptability of ‘Sangiovese’ to different environmental conditions in different Tuscans areas, all characterized by appellation contrôlée: Chianti Colli Aretini, Val di Chiana, Cortona and Montalcino. These areas have been described by their climatic and pedological characteristics, while ‘Sangiovese’ adaptive responses have been assessed by survey of ripening kinetics and of main vegetative and productive parameters and, finally, by determination of the qualitative performances both of grapes and wines. In relation to the wines, these were obtained by microwinemaking in the different investigated areas. Furthermore, inside each surveyed area, uniform areas of viticultural suitability were identified, in which ‘Sangiovese’ performances can be considered homogeneous in response to similar cultivation systems. Results confirm the strong interaction between cultivar and environment, by giving different enological products in relation to the growing area.
