The purpose of the current work was to investigate the capability of MCR-ALS to extract relevant information from FT-NIR spectra acquired on-line during milk lactic acid fermentation. The three concentration profiles obtained successfully described the coagulation process occurring in milk lactic acid fermentation in agreement with pH and rheological results.
