The results of the application of the recent Decision 2001/471/CE of the ECC are reported. Bacteriological analyses with the destructive method allow an evaluation of the hygienic-sanitary state upstream in the working line, avoiding the perpetuation of microbial contamination. Furthermore, there has been an experimentation to highlight whether or not different bacterial loads prevail in the four sampling regions; such loads were evaluated singly with the aim of adopting preventive, if necessary. The efficiency of the operations to control the cleansing and disinfecting operations, minimising secondary contamination, is monitored by microbiological measures with optimum results. Therefore the 2001/ 471/CE Decision completes the application of self-control in all the phases of the working line, leading to improvements in the hygienic state of both the environment and of the processing itself.
