In this paper a case study aiming to check the capability of one electronic nose in discriminating different qualities of milk is presented. All the milk samples were UHT, partly skimmed and commercially available in supermarkets. In particular, some samples belonging to the same brand, which showed unusual flavour at the opening of the packaging, were compared with samples of the same kind of milk but belonging to different brands. The comparison was carried out both comparing the flavours just after at the opening of the packaging and after two hours from that. In all the considered cases, the Principal Component Analysis was able to discriminate samples in different groups; moreover, the analysis of the olfactory fingerprints showed that after the opening of the packaging the evolution of the flavour of "irregular" samples was different from that of the "normal" ones. The obtained results confirm the utility of the e-nose approach in monitoring the quality of UHT partly skimmed milk especially if combined with chemical, physical and sensory techniques.
