Monovarietal olive oils from sixteen local accessions and four Tuscan varieties grown in lake Garda district (northern Italy) were analyzed during a three-year period for volatile compounds and autoxidation resistance (AOS). Accessions were grouped according to their dynamic head space composition and some distinctive volatile profiles were detected. AOS resulted more dependent from the genotipic than the maturation index. The utilisation of minor local cultivars to improve sensorial quality and AOS seems to be an interesting technique in improving olive oil quality.
