A rapid, highly sensitive, high-performance liquid chromatographic method has been developed for the determination of ascorbic add in milk. After ultracentrifugation, samples are directly injected in the chromatograph equipped with an electrochemical detector using sulphuric add 1 mM as mobile phase. In the experimental conditions adopted the detection limit (3 S/N) is 0.1 ppm and the relative standard deviation for five determinations at 2.2 mg/l of ascorbic acid is 3.5%. The method is easy to perform and is recommended for large scale routine analysis.
