Mammalian digestive endopeptidase, particularly trypsin, are less effective on lupine globulins and on BSA than on casein. Resistence to proteolytic attack is related to presence of bound carbohydrate (conglutin γ) or to conformation (globulins 6 and 8 and BSA) and is decreased by removing carbohydrate or by heat denaturation of the protein.
