Two new rapid methods to determine shell egg freshness were investigated on eggs stored at different temperatures: a colorimetric method based on the albumen capacity to link metals and a turbidimetric test for albumen stability to alcohol. Air cell height and Haugh Units, the most common indices for the detection of egg freshness, were also evaluated for comparison. Data about the influence of room relative humidity and about the variability in homogenous lots of eggs are also given for some of the indices studied. This research contributes to a better definition of shelf life for grade A and A extra eggs according to the European Union legislation.
