The microbiological situation of minced bovine meat and hamburgers packaged in modified atmosphere and stored at 2°C was evaluated. The aim of the work was the shelf-life determination. According to the obtained results the two different products have a medium shelf-life of 5-6 days if refrigeration temperatures are respected.

Abstract
