Sugars play a double role in human diet: on the one hand they are a fundamental energetic source, on the other hand their excessive intake has been often connected to short- and long-term pathologies. Therefore, a growing interest in sugar substitutes to be used in low-calorie foods has been observed. However, when the sugar content of a product is changed, also food rheology and texture may be affected. The aim of this study was the evaluation of the effects of the presence of different sweeteners on the rheological properties of dough for sweet baked goods. Actually, this topic has been little investigated so far. Different “croissant” formulations, without sweeteners or containing, as alternatives, sucrose, fructose, and sucralose were investigated. The structure of the dough was evaluated by means of different techniques, able to describe the intrinsic properties of the material and to predict its behavior in a real process. Both fundamental (dynamic oscillatory tests) and empirical (farinographic test, dynamometric measurements) rheological tests were performed, and rheofermentographic and Image Analysis techniques were used to monitor the leavening phase. Different rheological behaviors were evidenced for the systems investigated, obtaining interesting information for product development.
Gli zuccheri rivestono un duplice ruolo nell’alimentazione umana: da un lato sono una fonte energetica fondamentale, dall’altro il loro consumo eccessivo risulta spesso associato a patologie a breve e a lungo termine. Sta quindi riscuotendo sempre maggiore interesse la ricerca di sostituti dello zucchero da impiegare in formulazioni alimentari ipocaloriche. Tuttavia, la valutazione dell’impatto di tale sostituzione sulle proprietà di struttura di un alimento è un aspetto non trascurabile nello sviluppo di nuovi prodotti. Lo scopo di questa ricerca è stato quello di valutare l'influenza dell’impiego di diversi dolcificanti sulle proprietà reologiche di impasti per prodotti da forno, aspetto poco indagato finora in letteratura. Sono state valutate formulazioni “tipo croissant” prive di dolcificanti o contenenti, alternativamente, saccarosio, fruttosio e sucralosio. La struttura degli impasti è stata studiata mediante tecniche capaci di descrivere le caratteristiche intrinseche di un materiale ed il suo comportamento in condizioni analoghe a quelle di un reale processo produttivo. Sono state pertanto condotte misure reologiche fondamentali (dynamic oscillatory measurements) ed empiriche (test farinografico, misure dinamometriche), nonché prove reofermentografiche abbinate a tecniche di Image Analysis per il monitoraggio della lievitazione. Il lavoro ha evidenziato proprietà reologiche differenti nei sistemi indagati, interessanti per lo sviluppo di prodotto.
